I have recently cut back on my dairy consumption, so I’ve been on the search for a new breakfast that I could eat & prepare fast as a replacement for my usual greek yoghurt.

I’m a keep it simple kinda gal when it comes to cooking and preparing meals. I love cooking when I have the time, but even then, simple is best. Less is more. You get the drift.

I want to grab a handful of natural ingredients, roughly chop and wash them and chuck them in a bowl or in a pot, and voila, have my meal complete in under 10 minutes.

I ran in to a old client the other day who is studying naturopathy and she planted the seed of an idea by suggesting stewed apple.

I came up with the following version of stewed apples with a twist. “Stewed Green Apples and Matcha.”

For me this is simple, easy and quick to prepare enough for a few days in advance so that I have an instant breakfast on the run.

Stewed Green Apples and Matcha

Ingredients:

  • 4-5 Green Apples

  • 1 teaspoon of Matcha Green Tea Powder

  • Sprinkle of cinnamon

  • 1 + dessertspoon of Psyllium

  • Stevia/Natvia to taste

Method

  1. Dice Green Apple into cubes. (You may skin if you prefer)

  2. Add to saucepan with enough pre-boiled water to meet the level of the apples approximately half way.

  3. Sprinkle over cinnamon and Matcha until dissolved. fullsizerender

  4. Simmer for up to 10 minutes, or to suit personal taste and consistency.

  5. When stewed to your preference, spoon in a dessertspoon of psyllium and stir immediately to thicken.

  6. Add stevia or Natvia to taste if required.

  7. Store in the fridge in an airtight container and serve in portions with your choice of side e.g. Greek Yoghurt, Coconut Yoghurt or protein of your choice to suit your dietary requirements.

It may not be the most attractive concoction you’ve ever made, but it’s the taste and health benefits that matter!
